There are lots of variations on Gougeres, but I find it easiest to go with the easiest approach. It makes measuring a piece of cake.
Note: if you have a stand mixer, that helps a lot.

Ingredients:
- a stick of butter (8 Tbsp)
- a cup of water
- a teaspoon of sugar
- a teaspoon of salt
- a cup of flour
- a pound of gruyere cheese (or any cheese, actually -- cheddar does good too)
- separate this into roughly 1/3 and 2/3
- 4 eggs
Method:
- Shred the cheese and separate it into the 1/3, 2/3 set of shreds
- Line a baking sheet with parchment paper or wax paper
- Preheat the oven to 425 degrees
- Combine the butter, water, sugar, and salt in a saucepan over medium heat
- When it is totally melted and mixed, add the flour all at once -- just dump it in
- Stir until the flour is done -- this will take a few minutes. It's ready when it smells slightly nutty.
- Dump the flour ball into a mixing bowl or a stand mixer.
- Mix for a few minutes to allow the flour mixture to cool off slightly and release some steam
- Add in one egg.
- Mix until the egg is thoroughly incorporated.
- Add the next egg and repeat. Do this until all four eggs are incorporated. The dough will look satiny smooth.
- Add the 2/3 bunch of cheese and mix in.
- Take the dough and put it in a piping bag. If you don't have a piping bag, just take a plastic bag (like a ziploc) and use that, cutting a small hole in one of the corners.
- Pipe the dough onto the baking sheet. This is where you can have some fun, making all kinds of interesting shapes and sizes. At first, keep them small so you can get the hang of baking times.
- Sprinkle the leftover cheese on top of the piped dough.
- Pop into the oven and bake for about 15 minutes, until the gougeres are golden brown. Test one to make sure it is done inside. Note: your oven may vary in actual temperature from what it is set at, so vary your temperature setting for the best outcome for your unique oven.
- When done, move them to a wire rack to cool and set up.
