Garlic Soup

This is kind of but not quite like French Onion Soup.
If you like garlic, this might be a new favorite! 

Ingredients:
  • 15 cloves of garlic, peeled
  • 3 scallions, chopped
  • 2 shallots, peeled and halved
  • 3 bay leaves
  • sage:  1/2 teaspoon dried OR
                1 teaspoon fresh
  • 1 cup of brewed lemon tea (herbal variety)
  • 4 slices of hearty bread, such as French
  • 2 cups of stock, such as vegetable
  • 1 cup of milk, preferably skim
  • cheese, optional, preferably something like Gruyere 

Method:
  1. Combine the garlic, scallions, shallots, bay leaves, sage, and herbal tea in a microwave proof dish.  
  2. Cover the dish and microwave at full power for about 5 minutes, or until the garlic is tender.
  3. Remove from microwave and fish out the bay leaves.  Throw them in your compost bin.
  4. Toast the bread.
  5. Pour garlic mixture into a blender and puree.
  6. Add the stock and milk slowly, pulsing to combine.
  7. Pour the soup into crock-like bowls.
  8. Top each bowl with the toasted bread.
  9. If adding shredded cheese, run the bowls into the oven to melt the cheese (or use a flame thrower).
