Cinnamon Chicken

This recipe is from Sam Choy's cookbook, Sam Choy's Polynesian Kitchen.  In this book, he talks about the people and food he encountered as he traveled around Polynesia.  

Ingredients
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • salt and pepper to taste
  • 4 pieces of chicken, preferably with skin and without bones
  • 2 Tbsp oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tsps ginger, minced (that's about 1/2 inch of a robust ginger root) 
  • 3/4 cup orange juice
  • 2 Tbsp sugar
  • 2 Tbsp raisins
  • 1 Tbsp capers, drained and rinsed


It's a fun read, with short stories about the recipes.  This recipe, which is the invention of Hetiati who lives in the Marquesas, is found on page 115 of the book.

Method
  1. rub the spices on the chicken
  2. heat the oil in a skillet or saute pan
  3. cook the chicken skin-side down for 4 minutes
  4. add the onion, garlic, and ginger
  5. flip the chicken over and cook another 4 minutes
  6. drain off any excess oil
  7. add the rest of the ingredients (OJ, sugar, raisins, and capers)
  8. reduce heat and simmer for 10 minutes
  9. serve with hot rice
